Pectin (Cooking Ingredients)

A thickening agent used in the preparation of jams, jellies and preserves. Pectin is found in a variety of ripe fruits and vegetables.


Pectin (Food)

Present in various ripe fruits and vegetables, this natural, water-soluble substance is used for its thickening properties in the preparation of jams, jellies and preserves. The gelatin-like pectin is added to fruits that don't have enough natural pectin to Jell by themselves. If pectin isn't used, the alternative is to continue cooking the mixture until it's reduced to the desired consistency. Pectin only works properly when mixed with the correct balance of sugar and acid. It's available in two forms-liquid (usually made from apples) and dry (from citrus fruits or apples).

Pectin (Food and Health)

A natural gelling agent found in ripe fruit. Pectin is an important ingredient in making jams and jellies. Some fruits have high pectin levels (e.g., citrus fruit, blackberries, apples and red currants) but others are low in pectin (e.g., strawberries) so lemon juice is added to strawberry jam to help the set.


Pectin (Nutrition)

A soluble fiber found in the skins of fruits (apples and peaches) and vegetables. One study found that eating Pectin will make you feel full longer. Researchers speculate that Pectin may slow digestin and keep food in your stomach longer.


Pectin (Yogurt)

A fruit derivative that is used to jell, thicken, stabilize, and/or increase the shelf life of various foods including commercially-distributed yogurts. Other additives used to thicken yogurt include gelatin, gums, and starches.
